Secallona – a traditional Catalan cured sausage

As its name suggests, Secallona is one of the driest traditional cured sausages. It is characterized by a horseshoe shape, a thin profile and a firm texture, as well as an especially attractive, glossy surface. A longer maturation process brings out the meat’s natural flavor and the aroma of the spices. When enjoying Secallona, it is pleasantly firm at first, then melts in the mouth, leaving a long-lasting and harmonious aftertaste that evokes traditionally and unhurriedly made products.

Secallona is a great snack, but it also fits perfectly in fresh salads. It can be served with toasted breadsticks or crusty bread, and also paired with mild goat cheese.

As for drinks, Secallona pairs especially well with fortified Jerez (Sherry) wines, but it can just as well be enjoyed with Cava sparkling wine or young red wines.

Secallona should be stored in a cool, dry place. To prevent the sausage from losing its characteristic texture and from drying out too much, it is recommended to cover it after opening with a clean kitchen towel or cotton cloth.
