The Pajarera variety (Paharera), without a doubt, is one of the most characteristic olive varieties in Córdoba. Its name comes from the story that the ripe olives are so sweet that even birds peck at them.
The oils obtained from this variety are mild and fruity, with a medium level of bitterness and pungency, which makes their taste especially pleasant, reminiscent of aromas such as tomato, apple, exotic fruits, and bitter almond-like notes.
Due to its fatty acid composition, Pajarera is classified among the mild oils, which is why it is often blended with other varieties, such as Picual or Hojiblanca. Here, it is offered without the addition of other varieties, so everyone can discover why it is considered one of the most popular.
